This week Dale shares with us his most magnificent Tofu Scramble recipe starring VBites Chorizo Style Chunks along with other products available at Vegan Online. 
This meal is perfect for the winter months, and is filled with protein and flavour.


65g VBites Chorizo Style Chunks
1 & 1/2 cup medium firm tofu
1 tsp turmeric
BRAGG All Purpose Seasoning (click here)
Handful baby spinach
1/4 brown onion
1/2 cup mushroom
1 tsp mixed Italian herbs
1 tbsp Lotus Savoury Yeast Flakes (click here)
2 slices toast, to serve (Dale prefers soy and linseed bread) 


1. In a pan, sauté brown onion and garlic until translucent.
2. Add mushroom, cook until soft.
3. In a bowl, mix turmeric, Savoury Yeast and Italian herbs with enough water to make a thin mixture.
4. Crumble in the tofu and chorizo, then pour in the seasoning mix and stir to combine. Spray Bragg All Purpose Seasoning to taste and stir again.
5. Simmer until the added moisture is gone, then at the last minute toss the spinach in to wilt. 
6. Serve on top of toast (coated liberally in vegan butter) and enjoy!
